The 70 students taking part will be responsible for the running of all activities at the hotel - looking after residents, cooking up to 50 breakfasts in the morning, serving customers in the restaurant and running banqueting and conference facilities - from breakfast on 2 April to just after breakfast on 3 April.
They will also have to manage a Norfolk Police conference during the day and a private function in the evening.
The takeover is one of 1,000s of events taking place during the Springboard Careers Festival.
The careers event aims to raise the profile of working in the hospitality, leisure, travel and tourism industry. It runs from 31 March to 6 April.
